Oh hello there chicken. Are you finger licking? - So you know that other rotisserie chicken I showed you from earlier today? Well what I didnt show you was that I was actually spinning two birds at the same time on my rotisserie! This one was a little bit larger than the other bird so it took a bit longer to cook. This is my famous Peking chicken. I start off my dry brining the bird with kosher salt and letting it take a nap in the fridge over night. Then I stuffed the inside with garlic ginger shallots and Chinese five spice that has been tossed in tasted sesame oil. Before stuffing I squeeze half an orange into the stuffing and then stuffed the bird and included the half an orange. Then after about 90 minutes or so of spinning I made a glass of hoisin honey and soy sauce. Glazed maybe three times every ten minutes for a total spin time of 2 hours.
